Brisket Trim IRL 2 of 4. This is brisket trim 2 out of 4 from a recent catering event for about 70 people. Cut the wrapper on the deckle fat so you don’t gough into the meat. Pat down with a paper towel. Cut off the mohawk - to get consistent height across the whole point. Round off the point. And trim some loose hanging meat and thick fat. Square off that long side. I’m cutting off some of the flat here to get it down to 18” so I can fit 4 briskets on my 36” smoker. And then round off both flat

This brisket had a lot of fat on that side, so I carved more of that out. On the meat side, I shaved off the deckle and then cleaned up that long side. Today we are trimming this 17 lb prime brisket. I cut off the mohawk. And some loose bits of fat on the top. I cut off the thinnest corner of the flat, anything under an inch thick will dry out while smoking. Then I clean up both long sides. And round off the other flat corner. I shave off the deckle fat to be level with the flat muscle. I remove the fat globs from the flat, because I want my rub to be directly on the meat and not that fat. This was an odd shaped brisket with no mohawk, a very thin flat corner, and not much hump fat - so you’ll see me adjust my approach based on that. Every cow is different, so you have to be able to adjust your trim based on what you are given.
