Let’s talk about chives: western chives vs Chinese chives. Western chives (Allium schoenoprasum) are generally used fresh/raw as an aromatic and flavorful garnish or topping, like sour cream and chive potatoes. They bloom purple flowers (which are also edible) and have round, grass-like foliage. Chinese chives (Allium tuberosum) are sometimes sold as garlic chives, and are generally more often used cooked, especially used to infuse flavor into oil like in a stir-fry. They can be used raw as well
